When I made my first girlish attempt at higher education the semesters just dragged by. I felt like three months was a lifetime, and the time between semesters was just a blink of your eye. Now that I am older I find that all time, no matter what I am doing, goes by in the blink of an eye so I am not surprised that the Spring semester starts next Tuesday.
I am, sadly, taking one class. Breads & Rolls. Don't misunderstand, I am not sad to be taking this class. I am thrilled really. What is sad is that this is the ONLY class, baking or food related, that I can take with my current schedule. You see, I have a full-time job in a non-food related field.
I would love to work in the industry, but there are not a lot of opportunities for part-time bakers who can only work from 6:30pm to 10:30pm M-F. Picky as they are, bakery owners want bakers who can work mornings! (I know, you are shocked). So, until I win the lotto, inherit a large sum of money from a previously unknown to me (but generous) benefactor, or my darling gets a job that pays twice what he makes, I will have to continue to work days and take what little scraps of education I can get.
I get my textbook today. I got it for almost 1/2 price ordering it from the internet. I just hope it is the right edition! (I did not see that there were multiple editions, but who knows!!) I plan to do some reading ahead, as always, and I need to get my binder ready. Also, I need to buy another uniform. I will be going to class Monday and Tuesday nights, and getting home at around 11pm will make washing, drying and hanging my uniform for the next day hard, if not impossible.
Over the winter break I really considered what I want to do with school. If I can take classes I will, but the time will come for me to make a decision about school vs. money. I am still struggling with that, but I can tell you that I have such a passion for baking, bread, and desserts that I can't imagine my life in 10 years behind a desk. I want to be at the oven pulling out a batch of bread, or cookies, or pies, or cakes … you get the idea.
When you know what your passion is you are a happy person. When you know how to make the passion your zen you are lucky. When you reach your zen you find bliss.
