Turkey Burgers

So, I am not feeling the holiday spirit this year, for some reason.  Maybe it is the elections, maybe it is the economy or the tax-payer bail-outs, or maybe it is the alignment of the stars.  Whatever the reason I have gotten lazy on my Christmas baking.  If I wait too much longer I will find myself in a full on panic. 

To be fair, my freezer is full to the brim and there is really no room for more cookies, but I could clean it out if I wanted to.  I just don’t want to.  Merely thinking about shifting all the back bacon in there makes me tired.  I just cleaned out the pantry and the fridge, and I have been keeping up with my dishes on a daily basis, and when you cook as much as I do that is a lot of dishes.  For those reasons along I feel I deserve an award of some kind.  (I know, general housekeeping is not noteworthy, but the pantry thing was a big deal!) 

I did make some cookies already, and with any luck I will get more done this week.  I will finish my holiday baking.  I really will.  Maybe I will do Ginger Snaps … they are easy and tasty, and bake up flat, so I can cram more into a container and that takes up less space in the freezer.

I wonder, do I really need to bake so many cookies?  Maybe three batches of each kind is overkill.  I could get by with one of some and two of others.  Considering how many cookies I have left after Christmas maybe it would be wise to downsize this year.  Goodness knows this would be the time all things considered.


Last night for dinner, speaking of dishes, I made the VERY BEST chipotle turkey burgers … EVER.

I bet you want to know how I did it.  Well, I shall tell you.

Chipotle Turkey Burgers    Serves 4

1 1/4 lbs. 99% fat free ground turkey
1 egg
1 teaspoon seasoned salt (I used 1/2 tsp smoked and 1/2 spicy seasoned salt from Penzey’s)
1 teaspoon steak seasoning (again from Penzey’s)
1 tablespoon steak sauce
1/2 yellow onion, diced fine
1 chipotle pepper in adobo
1 tablespoon cilantro, chopped very fine

Combine the egg, seasoned salt, steak sauce, onion, chipotle pepper, and cilantro until well mixed.  Add they turkey and mix until well combined.  Form into four patties and chill for 30 minutes. 

Once chilled grill, or pan fry, over medium high heat until the internal temp reaches 165 F.

Enjoy with tasted buns, cheese and the condiments of your choice.  May I recommend avocado slices, bacon and Monterey Jack cheese?  Mmmmm.
