Chocolate Chip Cookie Brownies

When I have a bad, or stressful day, or when I have an especially good day, I like to treat myself.

Chocolate Chip Cookie Brownies

In the case of this recipe I was having a bad day.  It was the last day of a rather bad week, actually and I was in need of something really evil to sooth my nerves.  This recipe was inspired by a brownie that I saw in a coffee shop a few months ago.  It was a walnut brownie with a walnut chocolate chip cookie baked in the center and it sort of looked like danish.  As I am not a big fan of walnuts I passed, but the idea of it, the baking of cookies in brownie batter, stuck with me.  I think it is safe to say these little bars made everything all better.

These bars are sort of a marbled amalgamation of chewy brownies and buttery cookies.  Since these bars are not well structured, I just put scoops of cookie dough into the brownie batter with wild abandon, you tend to get a little of both the brownie and cookie in each bite.  I opted to skip nuts, since I just do not like them in cookies or brownies, but some toasted pecans, walnuts, or almonds can be added if you like it nutty.  Since I like really chewy brownies and cookies I did not cook these until they were firm in the center.  If you are not into really chewy, gooey brownies, or you prefer you brownies more done in general, add 3 to 5 more minutes to the cooking time.  These are over the top when they are still just slightly warn, but I also like them cold.  Served cold these would also make a good summer time treat.

Chocolate Chip Cookie Brownies     Yield 16 bars

For the brownies:
3 tablespoons unsalted butter
1 ounce bittersweet chocolate, chopped
3 tablespoons Nutella
3 tablespoons butter
1 cup sugar
1 egg
1 egg yolk
1/2 teaspoon vanilla
1/2 cup all-purpose flour
1/8 teaspoon cardamom
1 tablespoon Dutch-processed cocoa powder
1/2 teaspoon salt

For the cookies:
4 tablespoons unsalted butter, at room temperature
1/4 cup packed light brown sugar
2 tablespoons sugar
1 egg, cold
1/2 teaspoon vanilla
1/2 cup plus 2 tablespoons all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chocolate chips

Heat the oven to 350F.  Spray an 8×8-inch square baking pan with non-stick spray, line the pan with parchment paper, then spray the paper with non-stick spray.

In a small bowl combine the butter, chopped chocolate, and Nutella.  Melt in the microwave, or in a double boiler, until smooth.  Set aside to cool.

In a medium bowl combine the second amount of butter, sugar, egg, egg yolk, and vanilla until smooth.

Add the melted chocolate mixture and whisk to combine.  Sift in the flour, cardamom, cocoa powder, and salt.  Whisk until no large lumps of flour remain then spread it evenly in the prepared pan.  Set aside.

In a separate bowl cream together the butter, brown sugar and sugar until creamy and smooth.  Add the egg and vanilla and mix until blended.  Sift in the flour, baking soda, and salt and mix until most of the flour is incorporated.  Add the chips and mix until evenly distributed.

Scoop the cookie dough into the brownie batter then bake for 25 to 30 minutes, or until the edges are just set and the center does not wobble when the pan is shaken.  Cool in the pan for one hour, then remove from the pan and cool to room temperature before slicing.

    Paula – Stress actually helps me be more creative for some sick twisted reason. Not to say I can’t come up with something truly evil when I am chill and happy. Believe me, I can, but stress seems to draw out my most unreasonable cravings! :D

    Cookies and brownies, yummmm! Cookies and brownies AND NUTELLA there aren’t words to describe how excited I am to try these! Shhhh – last night (before I even saw this post) I had a spoonful of Nutella straight from the jar…someone better hide the Nutella, until I’m ready to make these brownies that is!

    Can I increase the recipe and make them in a bigger pan? I’m the Baking Fairy of my friends. I love to bake and then spread the love (can’t keep it in my house or I will eat it allll!).

    Kris – Yes, you can double the recipe and bake it in a 9″x13″ pan with no problems.

  29. These look evil and you know that’s a compliment! I must mention I used to share your preference for nuts. Until I started toasting walnuts. What a difference that makes. I now toast them before putting them into baked goods and I’m sort of changing allegiance but please don’t tell the pecans cause they’re still a favorite, just not currently the MOST favorite!

    I am a huge fan of both brownies and cookies. And now the two fuse together to create some awesome, delicious looking creation. Wow, definitely making these for my super bowl party next week. Personally for me, a person who loves to cook and bake in my kitchen at home,when using egg-based recipes, I use pasteurized shelled eggs. Especially when you have sunny-side eggs, (fried eggs,) raw cookie dough, anything to that affect which leaves some part of the egg raw. Only reason I say this is because I am concerned with what I eat,(yes I have a huge sweet tooth, but I workout and try to cook healthy,)and also look at those who I’m cooking for. With all these recent egg recalls, you can never be to sure. You should check them out.

    What is it about our nature that we sometimes want over the top treats? Not that a brownie, or a chocolate chip cookie, isn’t enough, but then we decide to add them together! (Kinda like the turducken phenomenon, only in cookie form) Not that I’m knocking these – far from it! They speak to every cookie and brownie loving cell in my body, and then appeal to my indecisiveness by giving me it all at once! Woohoo. Now I need some.

    I am not a beginner when it comes to baking. I made these today and followed the recipe exactly. They turned out HORRIBLY. The cookie part was burnt in 25 minutes and the brownie part was completely raw. I could not give these to my friend for his birthday like I had planned. I will not be making these brownies again.
