Chocolate Chip Brown Sugar Rolls

Ingredients
  • For the dough:
  • 2 cups all-purpose flour
  • 3 tablespoons packed light brown sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 ounces cream cheese, cold
  • 6 tablespoons butter, cubed and chilled
  • ½ cup buttermilk
  • 1 teaspoon vanilla
  • For the filling:
  • ½ cup packed light brown sugar
  • ¼ cup (4 tablespoons) butter, melted and cooled
  • 1 teaspoon vanilla
  • ¾ cup bittersweet chocolate chips
  • For the glaze:
  • ½ cup powdered sugar
  • 1 tablespoon butter, melted
  • 1 tablespoon milk, 2% or higher
  • ½ teaspoon vanilla bean paste
Instructions
  1. Heat the oven to 350 F and generously spray an 8-inch cake pan with non-stick cooking spray.
  2. In a medium bowl combine the flour, brown sugar, baking soda, and salt. Whisk to thoroughly mix then add the cream cheese and, with your fingers, rub the cream cheese in to the flour mixture until it is completely combined and no pieces remain. Add the butter and, with your fingers, run the butter into the flour mixture until half has been completely combined and the rest is in pea sized pieces.
  3. Make a well in the center of the dry ingredients and add the buttermilk and vanilla. Mix until the flour is just moistened then turn the dough out onto a lightly floured surface. Press the dough into a rough rectangle then fold in half. Repeat this process three more times, the dough should be smooth and easy to work with, and then cover the dough with plastic and chill for 20 minutes.
  4. While the dough chills prepare the filling. In as mall bowl combine the brown sugar, butter, and vanilla and mix until smooth. Set aside.
  5. Oncet he dough has chilled roll it out on a lightly floured surface until it forms a 9x14-inch rectangle. Evenly spread the brown sugar filling over the dough and sprinkle evenly with chocolate chips. Carefully roll the long edge of the dough toward you to form a log. With a sharp knife trim the ends, then cut the log into 12 1-inch rolls. Place into the prepared pan and bake for 25 to 30 minutes, or until the rolls are golden brown and the center is firm to the touch.
  6. Cool for 5 minutes in the pan, then turn the rolls out onto a serving plate.
  7. In a small bowl combine all the ingredients for the glaze and mix well. Drizzle over the warm rolls. Allow the glaze to set for 15 minutes before serving.
